PREPARATION: The grapes are taken to small press trays, which are filled by gravity; after crushing, the must ferments at a controlled temperature (18-24 ° C); the following spring, the wine is lightly filtered before bottling.
PAIRING: Aperitifs, tasty cheeses, smoked salmon, fish with spicy seasonings, white meats in sauce, spicy dishes of Asian and North African cuisine.
